Ingredients
  

  • 2 lbs Skirt Steak trimmed
  • 2 tbsp Garlic chopped
  • 1 cup DeMassimo’s Extra Virgin Olive Oil
  • Salt & Pepper to taste
  • 2 lbs Red Skin Potatoes quartered
  • .5 cup Parmesan Cheese grated
  • 2 bunches Asparagus trimmed

Instructions for Steak

  • Rub Garlic, Salt, Pepper and ¼ Cup of DeMassimo’s Extra Virgin Olive Oil on both sides of the Skirt Steak. Marinate the meat at room temperature for about 30 minutes. Feel free to get creative and add Rosemary, Thyme, Lemon Juice or your favorite Meat Seasoning to this recipe. Make it your own!
  • Prepare a hot fire in a charcoal or gas grill.
  • Grill the steak for 3 to 5 minutes on each side, until done to the degree of doneness that you prefer. Rest Skirt Steaks for about 5 minutes before slicing to serve.

Instructions for the Parmesan Roasted Red Skin Potatoes

  • Preheat the oven to 425 degrees F.
  • Cut the potatoes into quarters and toss in a bowl, incorporating 1/8 Cup of DeMassimo’s Extra Virgin Olive Oil, Salt, Pepper, and Parmesan Cheese. Toss potatoes until well coated.
  • Transfer potatoes to a baking sheet and spread into 1 layer. Roast for about 45 minutes, or until browned and crisp. Flip throughout cooking process to ensure even roasting.
  • Remove from oven, add a healthy sprinkle of Parmesan Cheese to garnish.

Instructions for the Roasted Asparagus

  • Preheat oven to 425 degrees F. Trim Asparagus stalks then place on a baking sheet in 1 layer.
  • While on the baking sheet, add 3 Tablespoons of DeMassimo’s Extra Virgin Olive Oil, Salt and Pepper. Mix into the Asparagus.
  • Roast for about 10-12 minutes depending on thickness. Serve on a platter.
