Classic Chicken Parmigiana
Traditional Style
Ingredients:
3 Chicken Breasts, butterflied (yield 6 pieces)
2 Cups Flour
½ Tsp Salt
¼ Tsp Pepper
3 Eggs, beaten
½ Cup Water, add to egg
3 Cups Italian Seasoned Bread crumbs
½ Cup Grated Parmigiana Cheese
3 Cups Shredded Mozzarella Cheese
1 Quart (32 ounce) De Massimo’s Authentic Pasta Sauce or Arrabbiata Sauce (for some kick!)
Preparation:
Butterfly Chicken Breasts, so that each full breast yields 2 slices of chicken. Place the flour with salt and pepper in one dish, egg wash in another and Italian bread crumbs with Parmigiana cheese in the third dish. Coat the chicken in flour, then the egg wash and lastly the bread crumbs.
Cooking Instructions:
Preheat oven to 350 degrees. In a large skillet, heat the oil over medium heat. Place the breaded chicken in hot oil until lightly browned on each side. Remove chicken from skillet and place on a sheet tray. Spread sauce on the chicken and top with Mozzarella cheese. Bake at 350 degrees for about 10-12 minutes, until cheese is melted.
Italian Sausage, Peppers, and onions
Ingredients:
6 Italian Sausages
1 Red Pepper
1 Green Pepper
1 Red Onion
2 TBS of EVOO
1 Quart (32 ounce) De Massimo’s Pasta Sauce or De Massimo’s Arrabbiata Sauce (for some kick!)
Preparation:
Place Italian Sausages in a tin foil pan. Julienne slice (about 1/4 inch) Green and Red Pepper along with Red Onion. Drizzle EVOO over and mix together. Add De Massimo’s Authentic Pasta or Arrabbiata Sauce and mix together again and cover with tin foil.
Cooking Instructions:
For a great summer-time grilling meal, place on grill over medium-high heat for 35-40 minutes. The juices of the sausages will marry with De Massimo’s Authentic Pasta or Arrabbiata Sauce and be OUT OF THIS WORLD! For a conventional oven, Preheat oven to 375 degrees. Bake for 45-50 minutes or until sausage is cooked through thoroughly. Enjoy this meal with your favorite hoagie bun too!
Goat Cheese & Arrabbiata Dip with Crostini
Ingredients:
4 Oz Herbed Goat Cheese
4 Oz Pain Goat Cheese
16 Oz De Massimo’s Authentic Arrabbiata or Pasta Sauce
One Baguette
Olive Oil or Butter
Salt and Pepper
Preparation:
Heat pan to medium and combine goat cheese and De Massimo’s Authentic Arrabbiata or Pasta Sauce in the pan. While the sauce and cheese are combining, slice a baguette diagonally (on the bias). Place the bread slices on a parchment lined baking sheet. Brush with olive oil or melted butter. Sprinkle with salt and pepper.
Cooking Instructions:
Place in the oven for 5-7 minutes, or until crisp at 350 degrees. The dip is ready to serve when the cheese is melted and well blended into the sauce. Pour into a severing bowl and place crostini on a tray or platter.
